Air fryer jacket potatoes

Working from home means that I often want something to look forward to during my work day, and lunchtime is definitely it! Air fryer jacket potatoes are one of my favourite lunches when it is cold outside and I just want a little comfort food.

I love being able to batch cook, and freeze items, and these baked potatoes are no exception! I often cook 4 at a time. I’ll enjoy one for my lunch, with baked beans and cheese or tuna, and then I’ll freeze the rest for simple lunches on very busy days.

Ingredients for air fryer jacket potatoes:

4 baking potatoes

15ml vegetable oil (I often use spray oil to save on calories)

1/2 tsp of sea salt, or garlic salt

Air fryer mashed potatoes in a bowl with chives and melted butter on the top

Method for air fryer baked potatoes:

Wash and dry your potatoes thoroughly.

Pop them in a bowl.

Prick each potato all over with a fork.

Rub the vegetable oil all over the potatoes. Ensure they are covered evenly.

Sprinkle salt and rub all over the potatoes.

Place the baking potatoes into the air fryer basket.

Cook at 200C (400F) for 40 minutes. Turn over at the 20 minute mark.

Can you freeze air fryer jacket potatoes?

Yes, absolutely! I love to make a huge batch up, cut them in half, then place them in a freezer safe box and use them over a month or two.

Do you need to use foil when cooking air fryer baked potatoes?

I don’t use foil for this recipe. I have in the past, when oven baking potatoes, but I don’t see a need for this air fryer version. The enclosed, much smaller space means that the skin of the potatoes crisps up beautifully and have a lovely soft inside. They are the crispiest jacket potatoes I have ever eaten! I have made slow cooker jacket potatoes in the past, and they are super convenient and tasty, but not a patch on these crispiness wise!

Do you need to use an air fryer basket?

If your air fryer just has a bowl, and no basket, you can definitely still make these jacket potatoes. They will crisp up lovely, just ensure that you turn them at least once, and leave lots of room so they are not sticking together and can cook evenly.

Can you make air fryer baked potatoes with olive oil?

Personally I tend to use a vegetable oil like rapeseed oil, as it has a higher smoking point than olive oil. You could use olive oil, at 200C, but I wouldn’t advise it personally.

Great topping ideas for air fryer baked potatoes:

We love to go for baked beans, baked beans and cheese, tuna and mayonnaise, tuna with mayonnaise and sweetcorn, tomato and chilli salsa, leftover slow cooker beef chilli or Ninja Foodi beef chilli, 15 minute bolognese, bacon with sour cream or Vegan coleslaw.

I made these in my Ninja Foodi 9-in-1 and I used the air crisp setting, 200C and set it for 20 minutes, check/turned when it beeped, then set it for another 20 minutes. Check this Ninja Foodi baked potato recipe for more details!

How to freeze jacket potatoes:

I love to make these up and then freeze them. To re-heat I just cook for around 12-15 minutes, at 200C, until they’re refreshed. You may find the cooking time varies a little, based on potato size, but this is a great way to batch prepare some lunches and then save on cooking time on the day!

You *could* defrost these in the fridge overnight, which would speed up the cooking slightly, but the difference is minimal so I just don’t bother.

Something to note about air fryer recipes is that all air fryers have different sizes, depths and as such the cooking times can vary. All air fryer recipes on this website are intended as a guide, and not a guarantee that the timings will be perfect. Enjoy!
