Air fryer pizookie

As a busy working Mum I’m always looking for tasty air fryer recipes and air fryer desserts that I can serve to my family. This air fryer pizookie is a great way to serve up a simple dessert for a crowd, takes just a few minutes to prepare and you can use either pre-made OR homemade dough. I’ll cover both methods in this post.

I love to save money on food shopping where I can while making sure that my little ones enjoy their meals, and we have lots of nice family meals on weekends in particular.

Having sweet treats is a nice way to round off a family meal, and this pizookie can be prepared in advance and just popped in the air fryer while you’re tidying up from dinnertime. It is delicious served with a variety of toppings such as honeycomb, chocolate sauce and salted caramel sauce.

I really think that the little things can make a big difference to the presentation of a meal, and serving lots of toppings and sweet goodies alongside this pizookie can be a real show stopping dessert for the end of a BBQ or roast dinner.

Follow along with my cookie dough, or use the ready made stuff you can buy from any UK supermarket. I love to follow my air fryer cookie recipe, or even my midnight cookies recipe, depending on the mood I’m in.

Ingredients for air fryer pizookies: 

135g salted room temperature butter

70g light brown sugar 

70g sugar 

10ml vanilla extract

1 egg

225g of plain flour 

1/2 tsp (teaspoon) bicarbonate of soda (baking soda)

175g chocolate chunks or chocolate chips (I love a mixture of milk and dark!)

Don’t want to make your own cookie dough? 

You can use shop bought cookie dough and you’ll have similar results! You can buy cookie dough in a lot of supermarkets for around £1.50-£2.00 now, which will save you some time and effort.

Method for air fryer pizookie:

Combine together the butter and both sugars in a bowl.

Add the egg and vanilla extract once combined.

In a separate bowl mix together the flour, bicarbonate of soda and chocolate chunks/chocolate chips.

Combine the wet and dry ingredients in a bowl and mix together until just combined.

Once the dough is mixed roll it out into a circular shape, wrap in clingfilm and then chill for a minimum of 1 hour. You can leave it overnight if you’d prefer. Chilling like this helps for a chewier more delicious cookie.

Add the dry ingredients to the wet ingredients and mix until combined well. 

If you’re in a hurry you could skip the chilling, but I really feel it adds to the overall texture of the cookies so try to make time for this step! 

Take your chilled cookie dough, roll it out and then shape it to fit either a cake pan or a cast iron skillet. Personally I love to use a well seasoned cast iron skillet, as I feel this gives a great result with a chewy cookie with a well cooked bottom.

Pre-heat your air fryer to 180C (350F) for 1-2 minutes if you’d like. I like to do this so the air fryer is ready to go right away.

Add your skillet, cake pan, or even just the dough to a baking paper lined air fryer basket, and then cook for 5 minutes at 180C (350F).

Remove from the air fryer and then transfer to a wire cooling rack to cool down.

If you used parchment paper then gently peel this back once it’s cooled lightly and it’ll keep for 2-3 days in an airtight container.

Do you need to use aluminium foil to bake these cookies? 

No, I use parchment paper if I am using just the air fryer basket, but usually I’m using a mini cast iron skillet and that doesn’t need anything as it is well seasoned and nothing sticks.

Want to make a chewy air fryer pizookie? 

Personally I feel like the chewiest cookies come from chilling the cookie dough for at least an hour or two, or overnight where possible. It only takes a couple of minutes to make this cookie dough and then chill it in the fridge. It definitely contributes to a chewy cookie and I love it.

Can you make an air fryer pizookie from pre-made cookie dough?

Absolutely! If you want to save yourself some time and/or effort then just buy the nice chilled cookie dough from the supermarket and you can get rolling it out right away as it’s been chilling for days or even weeks already!
