Air fryer roasted tomato soup

With the colder weather here there is nothing I want to enjoy more than nice hearty meals. We love having hot lunches, but don’t always want air fryer chicken or heavier dishes. This air fryer roasted tomato soup is always a winner and actually goes SO well with an air fryer grilled cheese or Ninja Foodi cheese scones.

A soup is a great way to pack your body full of healthy vegetables, with lots of great nutrition, and it doesn’t have to cost a fortune either. If you’re looking to make this more budget friendly then you can leave out the double cream entirely and switch the garlic head up for some garlic powder instead, added when you blend the soup.

By cooking all of the roasted vegetables in the air fryer there is no need to turn the oven on, which will help you save a few pennies, particularly if you’re just preparing the vegetables for a soup, and will also give you a lovely, hearty and flavoursome soup with very minimal effort.

Ingredients for air fryer roast tomato soup:

500g baby plum tomatoes

1 onion

1 head of garlic

15ml olive oil (approx 1 tbsp olive oil)

500ml stock (I use chicken stock but you can use vegetable or beef)

Salt and pepper

1 teaspoon white sugar

Fresh basil

150ml double cream

Method for making roasted tomato soup in the air fryer:

Cut the onion into quarters.

Wash the tomatoes.

Slice the top off the head of garlic.

Place the onion, tomatoes and garlic into a bowl.

Drizzle with the olive oil, salt and pepper and white sugar.

Toss well to cover everything.

Place into the air fryer basket.

Turn the air fryer on to 200C (395F approx).

Air fry for 20-22 minutes, until everything is lovely and soft.

Remove from the air fryer. Add the chicken stock (or your choice of stock), 120ml of double cream and the fresh basil.

Pulse in your food processor until it is the consistency that you desire. I love mine to be nice and thick and smooth. Perfect for dipping soft white bread rolls or air fryer croutons into!

When serving I love to season again with black pepper and a swirl of double cream. You could also add garlic powder, grated parmesan cheese or even a few fresh basil sprigs to make it look extra fancy!

PLEASE be mindful of the blender or food processor that you use. Many are NOT designed to blend hot food and can actually become incredibly dangerous if you do use it to blend hot food. As I learned when the lid burst off of mine one time…! Be sure to check all instructions before blending or pulsing any hot food.

Can you roast tomatoes in an air fryer?

Yes, when I’m roasting them on their own I usually air fry them for about 22 minutes, and you can see my method linked above. This works great! You get so much flavour when roasting fresh tomatoes and the smell is divine.

Want to add some other vegetables?

Any air fryer mediterranean vegetables will work well for this soup, those be mindful of the pre-packaged and pre-prepared ones, as these often contain a lot of oils that may spoil some of the flavour of the soup.

Red peppers work very well, and will go alongside the tomatoes in terms of cooking time too.

Want to use some different herbs?

Thyme works well as will rosemary. Any earthy herbs would be great, as would mixed herbs or Italian seasoning, if you have those to hand instead.

Fresh herbs are lovely in this recipe, however, I do love dried herbs too, and even freeze fresh herbs too to keep on hand.
