Some nights I like to use my air fryer to cook up a batch of chicken mini fillets. I keep them on hand to use in my easy chicken pie, for chicken chow mein, salt and pepper chicken and even just to have on hand for a chicken sandwich or wrap. Cooking chicken mini fillets in the air fryer is super simple and takes under 15 minutes from start to finish too.
My air fryer has to be my best kitchen gadget ever. I’ve got a Ninja Foodi OL750UK, multi-cooker with air fryer function, and then I’ve got an AF400UK, which is a double air fryer with two baskets. This is great for cooking different meals for my family and I love using it to make meal prep quick and easy.
What I typically do is cook up a big batch of these chicken mini fillets and then when they’re cool I will slice them up and they’re on hand when I want to make a quick and easy lunch.
These chicken mini fillets go great in a wrap, with air fryer chips, and are perfect for fussy little eaters too. Sometimes I’ll turn them into air fryer breaded chicken breast or air fryer chicken tenders for my daughters.
I’m a busy working Mum, and a fan of a hot lunch, and so I usually buy some of these when I’m working on meal planning. This is one of my easiest air fryer chicken recipes as it takes just minutes to prepare.
Batch cooking food helps me to save on time and/or effort, which is great when I have to run around after my girls and our little puppy!

Ingredients for making chicken mini fillets in the air fryer:
320g chicken mini fillets (serves 2)
Salt and black pepper
Spray oil or 15ml olive oil
Optional: 1/4 teaspoon herbs or seasoning of choice – some of my favourites to use are Old Bay, rosemary, garlic granules or sage. Keep on eye on what you use if you need gluten-free chicken.
Method for cooking chicken mini fillets in the air fryer:
Prepare the chicken mini fillets by removing skin or gristle and then dry thoroughly.
Spray your mini fillets with oil, or brush lightly with a little olive oil.
If you’re using the optional seasonings then add the chicken mini fillets to a bowl and shake the herbs or seasonings over the top. Shake well and mix to ensure the mini fillets are well coated.
Lay the chicken mini fillets on the bottom of the air fryer basket and leave a small amount of distance between each fillet to prevent them from sticking together.
Air fry for 6 minutes at 200C (390F approx).
Turn the chicken fillets over to stop them sticking to the bottom of the air fryer basket, or give a good shake if you like.
Air fry for a further 6 minutes at 200C (390F approx).
Depending on the seasonings used you may find that your mini fillets need another 1-2 minutes to look golden brown and be their tastiest. If you like them extra crispy you’ll want to add 2 minutes to the cook time also.
Before serving check that your chicken is at a safe internal cooking temperature of at least 75C (165F approx).
What to serve with chicken mini fillets?
For me I love to keep it nice and simple with air fryer mashed potatoes and air fryer green beans. I’ll often serve with tomato ketchup, curry sauce or onion gravy. It goes great with a salad too. Sometimes I have it with this Katsu curry sauce too.

Fancy cooking some vegetables at the same time?
As the cook time for these mini fillets is around 12-14 minutes you absolutely can cook your vegetables at the beginning, or halfway through the cooking time, depending on what you’re cooking.
I love peppers, onions, green beans, tenderstem broccoli or courgettes with these chicken mini fillets. I also love to make air fryer roasted tomatoes and then blend them into a roasted tomato pizza sauce which goes delightfully with these chicken mini fillets.
Can raw chicken be cooked in the air fryer?
Of course! This recipe is made with raw chicken. Obviously just check it is cooked throughout before serving. I love to use a meat thermometer just to check it is safe to serve without cutting the chicken apart.
