Lately, I have been really enjoying baking more. Finding great ways to add more nice snacks to our day, that are suitable for Daisy too, has been lovely. I’m really enjoying trying out new recipes and sharing them here of course. These dairy free blueberry muffins can be made using ‘normal’ ingredients (with dairy) or they can be made using my method. Which makes them dairy free.
They are also free of soya and other things that Daisy can’t have too. They are a little paler looking than normal ones but they are really tasty. Hope you enjoy my blueberry muffins recipe! Ingredients for dairy free blueberry muffins recipe
100g butter (I used Vitalite)
100g caster sugar
2 large beaten eggs
300g self-raising flour
1/2 tablespoon of vanilla extract
130ml milk (I used coconut milk)
1tsp baking powder
125g blueberries
Method for dairy free blueberry muffins recipe
Start by creaming the butter and sugar. Vitalite doesn’t cream quite as well as dairy based spread but I want Daisy to enjoy nice treats with us so I make it work.

Add the eggs. Then the flour. Looks a bit messy – as you can see.

Add the vanilla extract and the milk. The batter doesn’t need to be smooth. Just mixed!

Add the baking powder. Then add the blueberries last. Mix them in of course.

2/3 fill cupcake cases. As you can see I made 11 muffins from my dairy free blueberry muffins recipe. I use a *deep fill muffin tray. It works perfectly for muffins.

Cook at gas mark 5 (190C/375F) for 14-16 minutes. These are quite pale because of the lack of dairy. If you use dairy then they would look a little darker as they bake!

Can you use dairy based milk for this recipe?
Absolutely! If you want to use cows milk then please do. The main reason for these muffins to be dairy free is that I have daughters with dairy allergies, and want them to be able to enjoy nice things alongside us!
Want to add something else to these?
You could use other fruits, seeds or nuts if you want to give this a little more nutritional balance. I’ve added a couple of tablespoons of chia seeds to these in the past too with great results.

Ingredients
