Hello! Where has April gone? Part of me is glad that the time is flying by and Spring is here, as it gives us something nice to focus on. The other part of me feels sad that so much time has passed and we are still at home. Last time I wrote this post, a month ago, I thought that by now things might be at least starting to return to normal, a little bit. For now I am just focusing on getting through each day and doing the best that I can to enjoy our home, our time together and just being grateful for being safe. Hash browns really make a breakfast a real treat in our house. These hash browns are frugal, simple to make and crispy and delicious. Lately I have been enjoying making more things from scratch, using up what we have in, and avoiding food waste. These hashbrowns have been a real winner!

This is to show that I watch before. I don’t know exactly why I started watching it again, other than I just wanted something that felt familiar in amidst all the drama that is going on. I think this is the third time I’ve watched it, maybe the fourth, and I feel like every time I watch it I have a new perspective on my life which makes different areas of the show very interesting. I’m loving the Hello Fresh meals!

I’ve worked with Hello Fresh in the past but these boxes I’m paying for myself and I don’t have a current work arrangement with Hello Fresh.

Lately I have been going through a love/hate relationship with Hello Fresh. The current climate means that naturally they have more customers, and they are struggling with some supply issues. This means that twice I was let down/messed around with my box but in the end, they did refund me. I’ve since gone back to getting a weekly box and I’m really enjoying it.

I love that the meals are just so convenient. The portions are measured out already and you get almost everything you need (bar seasoning, oil, water etc) for the recipes. There is a great variety of meals most weeks and even though they’ve had to make some changes recently I’ve been really pleased with the quality of the food. Each week the box arrives, I unpack it and I date all of the bags so I know when they need to be used by.

A lovely person kindly bought this for me from my Amazon Wish List, and I was amazed by just how nice it is. I love the hint of sea salt and caramel is my favourite anyway, a combination of the two works so well.

My office!

My home office

I think I have mentioned this before but here I am again! I absolutely love having my own workspace to work from. There is something so enjoyable for me about having somewhere to switch on and off from work. It is great to be able to have my notes, lists and tech in one area so I can work during the short windows of time that I have free at the moment. I’ve got a nice comfortable chair which helps me to work and stay focused.

AD. Something else that I am loving about my office is having space to work out each day! Thomas and I are enjoying completing 30-45 minutes of exercise together each day in my office. I have a vinyl flooring in there, which I’m not in love with because there are a few small lumps and bumps in it. A little part of me wishes I went for a Cheap Laminate Flooring now but changing the floor is really far down a long list!

New notebooks!

I love a notebook, especially a new one! I’ve been fortunate to receive a couple of lovely gifts recently, including the *Mrs Hinch Book of Lists which I’m looking forward to starting. I love a bit of cleaning!

Masterchef on BBC iPlayer

I’m not finished yet but I’ve really been enjoying watching Masterchef. I love to cook, although not quite at the level of Masterchef! It is nice to watch people making fancy food and I just enjoy the relaxed vibe of the show, despite cooking to the clock and for impressive people!

April really has flown over. I thought it would drag with us not doing much. I need to give those hash browns a try. They looks amazing! I have been rewatching The Walking Dead. I wanted something I didn't really have to think about. Your office looks fab! I would love a space like that instead of just blogging from my armchair. x
