I’m a BIG fan of meal planning! Being able to save money, and avoid takeaways is great for our waistline and our budget too. For us, the main area where we go wrong with eating healthy is not planning dinners and not meal planning before we go shopping. Since we have become more motivated and begun meal planning, we feel more organised at home and we are eating healthier too. Today marks the first week of my new Meal Planning Linky.

Meal planning allows me to remove some of the day to day stress from my life. Often, by 3 pm, I’m tired from juggling work, nursery drop-off/pick-up and don’t have the motivation to think of what we want to eat for dinner. Also, my husband works shifts so he goes out to work at 5 pm sometimes. This means we need an early dinner and it falls right in the middle of Daisy’s bedtime routine.

By posting my meal plan weekly I want to make healthier choices, cut out takeaways, cook from scratch and save lots of money too. I’ve also switched from shopping at Tesco to shopping at Aldi and I’ve been saving a LOT of money so far.

The Meal Planning Linky Week #8

I will be planning 6 meals per week. This leaves 1 day each week for finishing up leftovers, dining out or visiting family for dinner. We don’t have set days for our meals, as I prefer to decide in the morning which of the meals we want and what fits in with our plans.

My meals for the Meal Planning Linky Week #8 are:

Airfryer roast potatoes

Roast gammon with all the trimmings including airfryer roast potatoes & sage & onion stuffing

Slow cooker chicken nachos

Slow cooker chicken nachos

Slow cooker beef chilli - A sneak peek at the end result

Beef chilli with jacket potatoes

Salt and pepper chicken

Salt & pepper chicken with rice in the slow cooker

Fish pie

A week of slow cooker dinners Slow-cooker-chicken-curry

Slow cooker chicken curry with rice in the slow cooker

My *triple slow cooker is really helpful when I want to make us a slow cooker dinner. I’m able to make us a main dish, a side dish and cook a separate meal for Daisy too. Most of this week’s dinners are Daisy friendly so I won’t have to do that much extra cooking for her. This is always a great week for me!

If you’re looking for meal planning inspiration then be sure to read my meal planning tips and my meal planning with mince post. I’ve also got a post about making a roast chicken go further.

Another set of great meal ideas this week. Quite lovely to keep up with what others are doing as it motivates me too. There are so many options and so much you can do in advance to make sure your days are less stressful.
As always, thanks for sharing and allowing us to share too.

Gotta love a roast with all the trimmings, YUM! We’re having backed potatoes with chilli as well, it’s the weather for filling comfort food. Thanks so much for hosting the linky each week, so many fab ideas.

I need to have a look at your slow cooker chicken nachos – the boys would love them!

They are really straight forward. Just dish straight up from the slow cooker onto the tortilla chips and serve! Yum! x

The slow cooker chicken looks really good – might try to add that to one of ours in the coming weeks.
