I’m a real fan of using my slow cooker, as my regular readers will know. Being able to pop a delicious meal in to my slow cooker is so convenient for us as a family. We don’t have to eat at a set time and if we are running late for dinner time we can just put it on ‘keep warm’. So convenient. Anyway, one day last week I really fancied chicken nachos! I decided to pop the chicken and the veggies in the slow cooker, then I only needed 10 minutes preparation for serving up. This is such an easy recipe so here is my slow cooker chicken nachos recipe – hope you enjoy it!
Ingredients for slow cooker chicken nachos
Peppers (red, green and yellow)
Onions (I used red)
1 tsp cajun seasoning
1 tsp ground cumin
2 tsp paprika
2 tsp mild chilli powder
Garlic cloves (I used 3)
Salt & pepper
1/4 tsp of sugar
Method for slow cooker chicken nachos
Place the veggies in the slow cooker.
Add the tinned tomatoes and tomato puree.
Measure out the spices and pop them in.
Add the chicken breast to the top. Spray with frylight.
Cook on high for 4 hours.
Shred the chicken breast, mix it in to the spiced veggies
Serve on tortilla chips. Why not make your own tortillas and turn them into tortilla chips? This is SUPER cheap!
Serve with sour cream, guacamole & nacho cheese sauce. Alternatively just sprinkle on grated cheese – like I did!
