Slow cooker chicken nachos

I’m a real fan of using my slow cooker, as my regular readers will know. Being able to pop a delicious meal into my slow cooker is so convenient for us as a family. We don’t have to eat at a set time and if we are running late for dinner time we can just put it on ‘keep warm’. So convenient. Anyway, last week I really fancied chicken nachos! I decided to pop the chicken and the veggies in the slow cooker, then I only needed 10 minutes preparation for serving up. This is such an easy recipe so here is my slow cooker chicken nachos recipe – hope you enjoy it! Ingredients for slow cooker chicken nachos

Slow cooker chicken nachos - The ingredients

350g chicken breast

3 mixed peppers

2 red onions

One can of chopped tomatoes

15ml tomato puree

1 tsp cajun seasoning

1 tsp ground cumin

2 tsp paprika

2 tsp mild chilli powder

3 garlic cloves

Salt & pepper

1/4 tsp sugar

Method for slow cooker chicken nachos

Spray your slow cooker with spray oil.

Chop and place the veggies in the slow cooker.

Add the tinned tomatoes and tomato puree.

Measure out the spices and pop them in. Add your garlic (chopped or crushed).

Mix together.

Add the chicken breast to the top.

Cook on high for 4 hours.

Shred the chicken breast, mix it into the cooked vegetables.

Serve on tortilla chips. Why not make your own tortillas and turn them into tortilla chips? This is SUPER cheap!

Serve with sour cream, guacamole & nacho cheese sauce. Alternatively just sprinkle on grated cheese – as I did!

How to make my slow cooker chicken nachos

Ingredients

  • 350g chicken breast
  • 3 peppers red, green and yellow
  • 2 red onions
  • 1 tin chopped tomatoes
  • 15 ml tomato puree
  • 1 tsp cajun seasoning
  • 1 tsp ground cumin
  • 2 tsp paprika
  • 2 tsp chilli powder mild
  • 3 garlic cloves
  • salt & pepper
  • 1/4 tsp sugar
  • spray oil

Instructions

  1. Spray your slow cooker pot with Frylight or rub with a small amount of oil.

  2. Chop your vegetables and place them in the slow cooker.

  3. Add the tinned tomatoes and tomato puree.

  4. Add your spices.

  5. Combine.

  6. Place the chicken breast on the top. 

  7. Cook on high for 4 hours.
  8. Shred the chicken breast and mix it into the vegetables. 

  9. Serve on tortilla chips. 

  10. If you like it then serve with sour cream, guacamole & nacho cheese sauce.

  11. Add grated cheese.
