I’m a real fan of cooking. I love to make items from scratch and most importantly I love to experiment from time to time. Recently I had a bout of illness and once recovered I fancied some really good junk food.

Recently my lovely Mum picked my up several whole chickens for just £1.25. These were reduced from £7 originally and were the huge chickens that you often see just before Christmas Day. I was really pleased with this and I promptly decided that I was going to stretch them as far as possible. A rubber roast chicken basically means you stretch a chicken as far as it is physically possible. There are a number of ways that you can do this, of course, but today I’m going to share my favourite.
A rubber roast chicken should ideally make at least 3 meals, depending on the amount of people that you are feeding. At the moment I am feeding two people, myself and my husband. This obviously means that our meals go further than yours may if you are feeding a larger family.
As I have been batch cooking recently I have been using my simple tortilla recipe at least twice a month. I like to make my simple tortilla recipe as it means I can pop chicken fajitas in the *slow cooker in the morning. Then I don’t need fresh tortillas on hand.
I first made this recipe not to save money but because I wanted fajitas and didn’t want to walk to the shops in the rain. I’ve realised just how easy this simple tortilla recipe is. I’m a fan of supermarket tortillas, on occasion, but only if I see them on offer. I love the taste of these fresh ones and they are so much easier to make than I ever thought!
