Hello! Happy Friday! I hope your week has been a good one! We’ve got LOTS going on at home at the moment as we’re redecorating our kitchen. This means that I’m not sure if the meal plan I’m making is realistic, but I’m giving it a go anyway!

Having as little food waste as possible is really important to me. We try our best to make things stretch. We still have so many house jobs to pay for. I am taking steps to make sure we are avoiding overspending on groceries. This week I’m keeping the budget low again, and using lots of Simply Cook recipes this week. *Why not sign up and grab yourself a box for £1? < This is a subscription service so be sure to cancel if you don’t want it to auto-renew. I will also be visiting Lidl to try and keep my grocery spends low. Daisy has a party on Sunday so I’ll be popping in for the final hour while Tom sits with her at the party! Looking forward to having a browse on my own, as I’ve always had Daisy with me lately!

At the start of each week, I like to sit down, for 20 or so minutes. I take a quick look at the foo we have in, especially fresh fruits & vegetables, and then I meal plan from there. We’ve been using lots of great Simply Cook recipes lately, as life has been really busy, and it has helped to keep us away from the takeaway.

I’ve been meal planning for over 2 years now pretty much every single week. It is a great way for us to save money. We’ve also been avoiding the takeaway successfully lately which is great. I recently added up what we spent on takeaways in 2019 (quite shocking!) and I’ll be sharing more about that soon I’m sure.

Every week I ask other bloggers to link up their meal plans, to try and share recipes around with one another, inspire each other and hopefully drive a little bit of extra traffic too! I really enjoy this linky and seeing what meals everyone is cooking that week.

The Meal Planning Linky Week #112

I’ve planned 7 dinners this week. I’m keeping it super easy. Lunches will mostly be leftovers and breakfasts will be very simply; cereal, toast & fruit etc.

I recently ordered myself a Simply Cook box (Paid for it myself but as I’m using a referral code here this section of this post is technically an AD just to be clear). You select 4 meals and get sent a little box with 3 spice, herb and stock blends plus a recipe card. Then you just buy the ingredients you need and you can make a fantastic dinner with ease. It’s a little like a Hello Fresh or Gousto box, but without the expense and you have to buy the fresh items still. However, for just £1 you can get 4 of these little kits to liven up mealtimes and get some inspiration. Sausage, fennel pasta bake (Simply Cook)

Easy homemade garlic bread - look at the bread once it has been dressed! Delicious
We love knocking up super simple garlic breads!

Spaghetti & meatballs with homemade garlic bread

Lamb kofta flatbreads (Simply Cook)

Chicken makhani, rice made in the slow cooker & naan (Simply Cook)

Fish, air fryer chips & beans/mushy peas

Moroccan inspired chicken & rice (Already have flavoured chicken in the freezer)

Slow cooker gammon joint with balsamic & orange glaze
Slow cooker balsamic glazed gammon

Roast gammon dinner with my ultimate onion gravy, airfryer parsnips, airfryer roast potatoes, sage & onion stuffing, and slow cooker gammon with balsamic glaze. Rolled over from last week as we didn’t get time!

      It is! Sadly we’ve had a change of plan this weekend, as my Mum is unwell in hospital, so maybe another day hey! x

    What a delicious meal plan! I love the sound of the Gammon & the Moroccan Chicken. I also really, really need to treat myself to an air fryer.

    I hope the decorating goes well and doesn’t change the meal plan too much. I am going to start on decorating our bathroom this week. Eek!

    Would you say an airfryer is worth the money I know that you seem to get a lot of use out of yours. Hope you still managed to get some of these meals I know it will have been hard with your Mum in the hospital.
