Good morning – Happy Friday! I hope that you and your family are keeping well during these difficult times. It’s already time for me to share my weekly plan and I hope, if nothing else, I can encourage you to plan some meals for the weekend!

Meal planning helps us to have low food waste which is really important to me. I feel really sad if we have to throw something in the bin, thinking of both the environmental impact and the fact that other people struggle to afford food. I am always trying to take steps to make sure we are avoiding overspending on groceries.

Planning what we’re going to eat, loosely at least, helps me to feel in control of life a little. This is especially important to me during these stressful times. This week I made an effort to go through my chest freezer and make a list of everything that we had in. This really helped with meal planning and it means I can use up some small quantities of items we have in (like mozzarella sticks leftover from a party food night!)

The Meal Planning Linky Week #120

I’ve planned 7 dinners this week, as we aren’t really having takeaways at the moment. I’ve also got a loose plan for lunches and breakfasts, which I don’t always do.

The meals for the Meal Planning Linky Week #120 are:

15 minute spaghetti bolognese with homemade garlic bread

Slow cooker chilli with rice (adapted from leftover bolognese)

Sausage, fennel pasta (from Simply Cook – *Get yourself a free box!)

Tandoori chicken with sweet potato wedges & mozzarella sticks (Simply Cook chicken)

Slow cooker whole chicken, sage and onion stuffing, yorkshires, air fryer roast potatoes, air fryer parsnips, onion gravy and more! I love a big roast and we haven’t had one lately so this will be a big treat!

Butter chicken, rice in the slow cooker, naan bread and bombay potatoes (Fakeaway!)

Sweet & sour chicken, chow mein and egg fried rice (Another Fakeaway!)
