Hello! Happy Friday. I’m sorry that I missed the meal plan last week. We did still meal plan at home, and stick to it well, I just didn’t have the heart for blogging and sharing life for a few days. I feel back on track now! We’ve got a Hello Fresh box this week, then I think I feel mentally ready to try meal planning and cooking from my own imagination again!

I love the convenience of Hello Fresh and am going to write about it soon. I just feel that some of the meal choices are getting a little samey so I might skip 1-2 weeks then see how I feel about going back to it!

Meal planning helps us to have low food waste which is really important to me. I feel really sad if we have to throw something in the bin, thinking of both the environmental impact and the fact that other people struggle to afford food.

I am always trying to take steps to make sure we are avoiding overspending on groceries.

Planning our meals is a great way for us to save money, stay organised and eat delicious, tasty meals. I really enjoy cooking, and love making something new at least weekly.

At the moment our meal times are one of the highlights of another day staying home together, and so I want to make sure we are enjoying nice food together.

For the week ahead I’ve loosely planned breakfasts and lunches, to ensure that we have enough items in, and then we are fortunate enough to have a Hello Fresh box coming for most of our dinners which I am very grateful for.

Hello Fresh: Creamy Chicken Masala with Fluffy Rice and Butternut Squash

Hello Fresh: Mexican Beef Loaded Wedges with Zesty Cream, Peppers and Carrots

Hello Fresh: Thyme Roast Chicken with Roasted Veggies and Sweet Chilli Sauce

Hello Fresh: Chicken Rigatoni with Crème Fraîche and Tarragon

Hello Fresh: Caramelised Onion Sausage Traybake with Carrots, Apple and Caramelised Onion Drizzle

Simply Cook night – using up one of the lovely recipe kits I have lying around!

Fakeaway curry night OR kebabs, weather dependent, as we have a gas BBQ now!

That’s it! A nice straight forward week for us. I’m looking forward to not having to plan our meals too much and everything being measured out for me.

      Thanks lovely, still struggling with anxiety levels at the moment but determined to keep pushing on and enjoying my life the best I can!
