Morning, Happy Friday! Going to be a bit of a strange weekend for a lot of us I’m sure with people starting to visit family/go outside more etc. I’m looking forward to a nice lazy day on Sunday, at home, and perhaps a nice family walk too!

Last week I mentioned that I was going back to meal planning more myself, however, I then decided last minute to get a Mindful Chef box, so the meals we were going to eat last week we’re now going to have this week! So sorry if this post is a little bit repetitive!

I managed to get a click & collect Tesco shop for next week, after visiting the store Monday, and I’m super grateful for that! I have avoided taking delivery slots, as I know there were people much more in need, but apparently slots are more freely available now, so in a few more weeks I may go back to getting our usual weekly delivery.

Meal planning helps us to have low food waste which is really important to me. I feel really sad if we have to throw something in the bin, thinking of both the environmental impact and the fact that other people struggle to afford food.

I am always trying to take steps to make sure we are avoiding overspending on groceries.

Planning our meals is a great way for us to save money, stay organised and eat delicious, tasty meals. I really enjoy cooking, and love making something new at least weekly.

At the moment our meal times are one of the highlights of another day staying home together, and so I want to make sure we are enjoying nice food together.

The Meal Planning Linky Week #131

For the week ahead I’ve loosely planned breakfasts and lunches, to ensure that we have enough items in, and then we are going to be using some lovely Simply Cook kits. *Grab yourself a box to try for just £1!

Simply Cook: Chicken & mushroom risotto

Simply Cook: Lamb kofte with no yeast flatbreads this has similar flavours to my slow cooker keema curry

Simply Cook: Mexican beef quesadillas

Simply Cook: Sausage & fennel pasta

Simply Cook: Mexican pork one-pot with rice

Homemade pizza night

Takeaway night (Something Daisy can enjoy with us if we can find it as she rarely gets to enjoy a takeaway with us!)

That’s it! A nice straight forward week for us. I’m looking forward to the Simply Cook kits, as they’re nice and straight forward, and hoping that Thomas will do the dinner a couple of nights, for a treat for me!

    We have had delivery slots the whole time as our son has type 1 it was a saviour to us. Slots are becoming much more available which takes a huge pressure of us. Your meals sound lovely and they do such interesting ones as well.

    Late to the party… doing my meal plan on a Monday now as that is when I go shopping. I love a nice, quiet and socially distanced supermarket :). Hope you had a good weekend.

      Sounds good! I’ve only been once so far, in the evening, and it was ok (ish) – just some people not paying attention to the arrows!

    I hope you had a nice relaxed weekend.
    I have sometimes felt bad for taking a delivery slot but for us to get to a big supermarket it would take two buses there and a taxi back because we couldn’t carry everything. The cost of that would be way over our budget.

      Oh love, don’t feel bad, sounds to me like you’re exactly someone in need! We have stores and supermarkets in walking distance (and we have a car too) which is why I wouldn’t want to take a slot, I don’t mean for anyone else to feel guilty who actually needs one! x
