Hello! I hope you’re all week. Another month almost done – be Christmas before we know it at this rate!! Where is the time going? I’ve planned out all of August’s meal plans nice and far in advance, and it’s helped me feel calm and in control while Daisy is home for the whole month.

Meal planning helps us to have low food waste which is really important to me. I feel pretty rubbish if we have to throw something away, usually thinking of the environmental impact and the fact that other people struggle to afford food around the world. I am always trying to take ste ps to make sure we are avoiding overspending on groceries.

This week we are mixing it up! We’re having 3 nights of *Mindful Chef dinners, and then we’re having 4 nights of *Simply Cook dinners. I had some referral credit on Mindful Chef, and I got a free box from Simply Cook, which is great! I’m loving having lots of variety, and it has took a lot of the mental load away from meal planning lately too relying on these meal kits.

I’ve been meal planning for well over 2 years now pretty much every single week. It is a great way for us to save money and I really enjoy having a nice variety of meals to choose from each week.

Each week other lovely bloggers link up their meal plans, to try and share recipes around with one another, inspire each other and hopefully drive a little bit of extra traffic too! I really enjoy running this linky and seeing what meals everyone is cooking that week.

Mindful Chef: Mushroom & spinach risotto with basil pesto (V)

Mindful Chef: Honey & balsamic pork meatballs with courgetti

Simply Cook: Beef stroganoff + mash

Simply Cook: Shakshouka + crispy baguette (V)

Simply Cook: Black Bean Chicken + egg fried rice

Simply Cook: Linguine with Courgette (V)

Three vegetarian meals this week for us to enjoy! It’ll be a nice change as we’ve had a VERY meat heavy month with our dinners!

The meatballs sound great and I love the idea of black bean chicken - I was looking for different chicken recipes and that fits the bill perfectly :)

This year is flying over considering we've been in lockdown for most of it. The mix of the Mindful Chef meals and Simply Cook one's sound great. I think my favourite meal from you this week is the Honey & balsamic pork meatballs. They sound a bit different x
