Happy Friday, I hope your week has been a good one. We’re settling into the routine of school, and I’m just trying to make the most of every day to ensure that I am maximising the child free time so I can be present for my family in the afternoons and on the weekends. I’m loving it so far! Sorry that I missed last week, we had a cold and I was feeling rough so just skipped it and went for some easy freezer dinners!
Meal planning helps us to have low food waste which is really important to me. I feel pretty rubbish if we have to throw something away, usually thinking of the environmental impact and the fact that other people struggle to afford food around the world. I am always trying to take steps to make sure we are avoiding overspending on groceries.

I’ve been meal planning for well over 2 years now pretty much every single week. It is a great way for us to save money and I really enjoy having a nice variety of meals to choose from each week.

Slow cooker Chicken chasseur (This is the 3rd time making this so I can photograph it and write it up this time assuming it goes well!)

Simply Cook: BBQ tandoori chicken & sweet potato wedges (Something else for Daisy as she can’t have chicken due to her FPIES)

Simply Cook: Mexican one-pot pork
Simply Cook: Beef stroganoff with mash
Roast gammon dinner: slow cooker gammon joint, air fryer roast potatoes, sage and onion stuffing, onion gravy, air fryer parsnips and lots more! I can’t wait for this already!
