Vegan coleslaw recipe

We love a nice picnic in our family. This vegan coleslaw recipe takes just a few minutes to prepare, and is super flavoursome too!

When the sun is shining it is always tempting to load up the car with our picnic basket, pick out a selection of shop bought goodies and then set off into the sun, but sometimes we want to enjoy homemade goodies and sit in our back garden too!

Vegan coleslaw

Ingredients for vegan coleslaw:

1/2 head of red cabbage

2 large carrots

1/3 cup of Vegan mayonnaise (We use Hellmanns) 

1 tablespoon of English mustard

1 tablespoon of white wine vinegar

Salt and pepper to taste

Method for vegan coleslaw recipe:

Rinse your red cabbage and scrub your carrots.

I never peel carrots, even for recipes like my air fryer carrots, as this is a great way to cut food waste, but just ensure you scrub them really thoroughly.

Shred your cabbage. You can do this with a knife, using a grater on the mandolin/slicing side, or even in a food processor.

Grate your carrots. Again, using either a grater or food processor.

Place the carrots and cabbage into a large bowl.

In a separate bowl mix together the mayonnaise, mustard and white wine vinegar. Add salt and pepper to taste.

Mix together the carrots and cabbage with the mayonnaise mix.

Enjoy! That’s it. It really is that simple. In just a matter of minutes you can be enjoying a delicious Vegan coleslaw.

Can you make a vegan coleslaw recipe without mayo?

There are a number of ways to make coleslaw, and if you want to make it without mayo then you’ll want to use olive oil instead. This easy no mayo coleslaw is super simple, but tasty!

What other vegetables can you use in this vegan coleslaw?

White cabbage and spring onions can be a welcome addition to a Vegan coleslaw. Also, apple is a tasty way to add some additional sweetness without overpowering the flavour. I love to serve air fryer apple chips on the side of this for something a little different too if I’ve got apples to use up.

What is a great serving suggestion for this coleslaw?

We love to serve this with sandwiches and picnic style food. If you’re not a vegan then I suggest my Moroccan lamb burgers, as this will work SO well in soft white rolls with this. Alternatively just top any of your favourite meat substitute burgers, we love the Meatless Farms ones!

I love to serve this alongside a selection of salads and goodies for a picnic and this pesto orzo salad works well.

Ingredients

Instructions

  1. Rinse your red cabbage and carrots.
