Ingredients

  • 350g chicken breast
  • 3 peppers red, green and yellow
  • 2 red onions
  • 1 tin chopped tomatoes
  • 15 ml tomato puree
  • 1 tsp cajun seasoning
  • 1 tsp ground cumin
  • 2 tsp paprika
  • 2 tsp chilli powder mild
  • 3 garlic cloves
  • salt & pepper
  • 1/4 tsp sugar
  • spray oil

Instructions

  1. Spray your slow cooker pot with Frylight or rub with a small amount of oil.

  2. Chop your vegetables and place them in the slow cooker.

  3. Add the tinned tomatoes and tomato puree.

  4. Add your spices.

  5. Combine.

  6. Place the chicken breast on the top. 

  7. Cook on high for 4 hours.
  8. Shred the chicken breast using a couple of forks and mix it into the vegetables. 

  9. Serve on tortilla chips. 

  10. If you like it then serve with sour cream, guacamole & nacho cheese sauce.

  11. Add grated cheese.
