Salt and pepper chicken

Ingredients

Coating

  • 100 g plain flour
  • 25 g butter
  • 300 g chicken breast
  • 15 ml vegetable oil
  • 1 egg free-range
  • mixed peppers
  • 1 onion

Sauce

  • 15 ml vegetable oil
  • 1 chilli chopped
  • 1 thumb sized piece of ginger
  • salt + pepper
  • 30 ml soy sauce

Instructions

  1. Mix together the flour and butter. You want to achieve a breadcrumb consistency.

  2. Mix your egg in a bowl. 

  3. Dip the chicken breast into the egg and then the breadcrumb. Sprinkle with salt.

  4. Fry the chicken in vegetable oil for around 6 minutes, until lightly browned. 

  5. Fry your peppers and onions. 

  6. Combine the soy sauce, ginger, chilli pepper, salt & pepper and a little vegetable oil. 

  7. Spray your chicken on a baking tray. Drizzle over the sauce. 

  8. Cook at Gas Mark 5 (190C) for 15 minutes.
