A delicious golden honeycomb recipe ready in minutes.
Combine the sugar and golden syrup in a saucepan, on the lowest heat setting. Then you want to melt them together until they form a paste.
Heat the mixture gently for around 4-5 minutes. Try to ensure that the mixture does not boil up until the grains of sugar have dissolved into the golden syrup.
After around 4 minutes, when the temperature reaches 140c-150C, remove this from the heat. This should ensure the honeycomb sets perfectly for you and doesn’t turn into a sticky mess.
Remove the pan from the heat, give it around 30 seconds for some of the bubbles to die down and then stir in the bicarbonate of soda. Within seconds of stirring this in the mixture begins to rise up, another 10-15 seconds of stirring will see it turn golden and it is ready to pour into the baking tray.
Pour into a lined 23cm baking tray. I use baking tray liners. I crossed the liners over to ensure that there were no gaps and this worked perfectly.
Leave the mixture to set, for around 1 hour. Then it will be ready for cutting/breaking up/smashing with a rolling pin or mallet.
