  • 350g chicken breast
  • 3 peppers red, green and yellow
  • 2 red onions
  • 1 tin chopped tomatoes
  • 15 ml tomato puree
  • 1 tsp cajun seasoning
  • 1 tsp ground cumin
  • 2 tsp paprika
  • 2 tsp chilli powder mild
  • 3 garlic cloves
  • salt & pepper
  • 1/4 tsp sugar
  • spray oil


  1. Spray your slow cooker pot with spray oil or even rub with a small amount of oil.

  2. Chop your vegetables up and place them in the slow cooker pot.

  3. Add in the tinned tomatoes and the tomato puree.

  4. Add your spices.

  5. Combine well.

  6. Place the chicken breast on the top. 

  7. Cook on high for 4 hours.
  8. Shred the chicken breast using a couple of forks and mix it into the vegetables. 

  9. Serve on the top of tortilla chips. Or with your choice of side!

  10. If you like it then serve with sour cream, guacamole & nacho cheese sauce.

  11. Add grated cheese.
