  • 3 bananas
  • 1 egg free-range
  • 2 tbsps vegetable oil
  • 5 tbsps milk semi-skimmed
  • 5 tbsps sugar
  • 1/2 tsp salt
  • 1 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 350 g plain flour


  1. Mash the bananas. Add the egg, vegetable oil and milk.

  2. In a separate bowl combine the sugar, salt, bicarbonate of soda, baking powder and plain flour.

  3. Combine the wet and dry ingredients. 

  4. Spray your loaf tin, or use a loaf tin liner. Pour the mixture into the loaf tin.

  5. Bake at gas mark 5 (190g) for 40-45 minutes. I check after 40 minutes, using a cake tester, and mine was ready.
