  • 225 g self-raising flour
  • 55 g butter
  • Pinch salt
  • 30 g grated cheese mature cheddar
  • 150 ml semi-skimmed milk

  1. Start by lighting the oven to gas mark 7.
  2. Rub the flour and butter together. Add a pinch of salt.
  3. Add the grated cheese.
  4. Mix in the milk.
  5. If the dough is too wet then add a little extra flour.

  6. Pat it together into a big round basically using my hands.

  7. Make the dough around 1/2 inch thick as these will rise up in the oven.

  8. Line or grease a baking tray. I use baking tray liners.

  9. Use a pastry cutter to make rounds.
  10. Mix the leftover dough to punch out a few more.
  11. I get around 10 scones usually, although they are on the smaller side.

  12. Brush the tops of the scones with a little milk.

  13. Bake at Gas Mark 5 (190C) for around 12 minutes.

  14. Cool on a cooling rack or enjoy warm from the oven.
