Meanwhile, peel and finely dice the onion.
Fry in spray oil until lightly browned. Add a little brown sugar for a caramelised onion finish. Remove from the heat once cooked.
Grate potatoes. If desired you can use a muslin cloth to replace any excess water. I didn't bother and they were still delicious!
Gently mix together the onion and grated potato.
Add salt & pepper.
Shape into your desired shape.
