Ingredients

  • 15 ml olive oil
  • 1 carrot
  • 1 red pepper
  • 3 cloves of garlic
  • 300 g mince I used a mix of pork & beef
  • 1 tin of tomatoes 400g approx
  • 30 g tomato puree
  • Salt & pepper
  • 1 beef stock cube or stock pot
  • 50 ml water
  • Italian herbs: 1/2 tsp oregano basil, rosemary, them, parsley OR you could use 2 tbsp of Italian herb mix to save time
  • 50 g parmesan or cheese of your choice
  • 250 g spaghetti fresh or dried

Instructions

  1. Put a saucepan of salted water on to boil for the spaghetti.
  2. Grate carrot and thinly slice pepper.
  3. Grate, finely slice or crush your garlic with a garlic press.
  4. Heat oil in a pan.
  5. Add your carrot & pepper, cook for 2-3 minutes.
  6. Put your spaghetti in to the boiling water to cook as per packet instructions.
  7. Add your mince and brown. Should take around 3-4 minutes.

  8. Season with salt and pepper. Add the garlic and herbs.
  9. Add tomato puree and mix.
  10. Add the tinned tomatoes (I use chopped) to your pan.
  11. Mix your stock cube or pot with 50ml of hot water. Add this.
  12. Simmer on low for 5 minutes before serving. Make sure it's piping hot!

  13. Serve over cooked, drained spaghetti and top with cheese of your choice - we love a mix of cheddar and parmesan! Add a little cracked pepper too!
