How to air fryer butternut squash

Ingredients

  • 400 g butternut squash
  • 5-10 ml vegetable oil skip olive oil as it has a lower smoking point or oil spray
  • Seasoning of choice - see above for some suggestions

Instructions

  • Peel and chop the whole butternut squash by chopping off both ends, peeling with a vegetable peeler and then slicing down the middle and into half sizes lengths, then remove the seeds and slice into 1-inch thick slices.
  • You can also buy the butternut squash slices or cubed butternut squash ready prepared if that is more convenient.
  • Coat the cut butternut squash slices in the oil and your seasoning of choice.
  • Place in your air fryer basket in a single layer. This will allow for good air flow.
  • Air fry for 12 minutes at 190C (375F approx).
  • Flip over and cook for an additional 6-8 minutes until your slices have reached their desired browning.
  • I like my butternut squash to be fork-tender and lovely and golden.
  • Add a sprinkle of salt and pepper before serving.
  • Make sure to adjust the cooking time based on what size butternut squash you're air frying.
