Air fryer roasted tomatoes

If, like me you’ve been growing your own tomatoes recently then you may find that you’ve suddenly get an excess amount of tomatoes to use up! These air fryer roasted tomatoes are absolutely delicious as they are OR as the base of a roasted tomato pizza sauce and great for an air fryer pizza base.

I’ve also used these roasted tomatoes, made in the air fryer, as the base of a tasty pasta sauce, served with homemade pasta.

We’ve enjoyed some of these in soft white rolls or a simple tortilla as part of a tasty lunch too, and even chopped and stirred through rice dishes to bring a little extra flavour with very minimal effort.

Ingredients for air fryer roasted tomatoes:

8-10 tomatoes (ours were ‘moneymaker’ in a variety of sizes)

15ml vegetable oil (skip olive oil as it has a lower smoking point)

4 cloves of garlic (leave the skin on!)

10 sprigs of thyme

1 sprig of rosemary

Generous pinch of salt and pepper

Method for making roasted tomatoes in the air fryer:

Wash your tomatoes. Dry thoroughly.

Place in a bowl with the vegetable oil and garlic cloves.

Mix well until all tomatoes are coated.

Add the herbs and salt and pepper.

Cook at 200C for 20 minutes. Check at the 10 minute mark and shake gently if needed, although you shouldn’t need to!

Can you air fryer cherry tomatoes?

Yes! I’d recommend cooking for just 8-10 minutes, checking halfway through, due to their smaller size.

These will be REALLY delicious too!

You could use this method for just about any tomatoes, however, if they are on the smaller size then half the cooking time and then check near the end. Use your judgement if you need to add a little more cooking time!

Can you make oven roasted tomatoes in the air fryer?

Yes, this recipe is the perfect way to recreate that oven roasted effect but in the air fryer.

For me I love using my air fryer as it sits on the worktop, is close by, doesn’t require me to bend down low with hot and heavy trays and it is much easier to clean compared to my oven too.

What are some tasty uses for these roasted tomatoes?

They go GREAT in salads and pasta. They also work well on the top of pizza.

I love to blitz them up to make a roasted tomato pizza sauce which is packed full of flavour. Before I do I just remove the cooked garlic from the skins and then strip the herbs from their stalks and blend it all together. I’ve been known to stir a few of these, blended, into a garlic and herb dip, for some extra flavour.

It makes a lovely rich, smooth sauce that is packed full of flavour and goodness.

Can you reheat air fryer roasted tomatoes?

Yes. I’d recommend just air frying for 2-3 minutes at 180C and then checking they are piping hot before serving.

These are delicious reheated and served on the top of a couple of slices of buttered sourdough.
