Super simple, cheap and delicious chocolate chip muffins

I absolutely love to bake for myself and my family. These chocolate chip muffins are simple, delicious and tasty! They can be mixed and in the oven in just a couple of minutes so I hope you enjoy making them! Scroll down now for the recipe for my chocolate chip muffins.

Delicious chocolate chip muffins

Ingredients for choc chip muffins (UK)

280 g self-raising flour

1 tsp baking powder

50 g cold butter or margarine

70 g caster sugar

100 g milk chocolate chips

50 g dark chocolate chips

2 medium eggs

225 ml semi-skimmed milk

1 tsp vanilla extract

Method for making chocolate chip muffins:

Pre-heat the oven to 200C (gas mark 6). 

Line a 12 hole tin with muffin cases. 

Combine the flour and baking powder in a bowl.

Add in your margarine and mix by hand or blitz in the food processor. I think this is one of my favourite uses for your food processor.

Add the caster sugar and chocolate chips before mixing again. 

In a separate bowl whisk together the milk, eggs and vanilla extract.

Add this wet mixture to the dry ingredients and mix well. 

Divide the mixture among the 12 muffin cases. 

As a bonus, if you want, add a square of chocolate into the centre of each of these chocolate chip muffins. 

Bake for 17-18 minutes until a cake tester comes out clean. 

Serve with custard, eat alone or freeze for a later date.

I love the addition of a square of chocolate into the centre of these muffins. It works really well and gives a nice surprise addition when you bite into one of these chocolate chip muffins.

Can you make chocolate chip muffins in the air fryer?

You can, however, I’ve never tried it! I would suggest starting with 1/2 the time, as the air fryer makes everything MUCH faster! Then go from there, use a cake tester to ensure the batter is completely cooked through.

What is the semi skimmed milk to grams?

It is pretty much 1ml to 1g. 100ml is around 103g.

Can you use cheap chocolate in this recipe?

Yes, absolutely. You’re unlikely to notice much of a difference.

Want to make these chocolate orange muffins?

Use a teaspoon of orange extract, or just grate some orange peel and a little squeeze of the fresh orange in.

Can you make these chocolate chip muffins with margarine?

Yes, absolutely! I love to use Vitalite, as it is dairy free and it seems to work well in recipes too with no horrible aftertaste.

  10. Bake for 17-18 minutes until a cake tester comes out clean. 

  11. Serve with custard, eat alone or freeze for a later date.
