I love to use my Ninja Foodi OL750UK for a variety of meals, and the slow cooker function is great. This easy slow cooker sausage casserole is super simple to prepare, taking just a few minutes of time, and is absolutely delicious. The perfect winter warming dinner at the end of a long day!
Sausage casserole, sausage stew, whatever you want to call it, this dish is packed full of vegetables and delicious flavours. It’ll cook on slow through the day, perfect if you’re working from home like so many of us are these days!
Slow cooking this casserole keeps it packed full of flavour and makes the vegetables wonderfully soft, perfect if you’ve got fussy little ones (like me!) and want to pack them full of goodness this cold and flu season. It is also the perfect comfort food if you’re under the weather and low on time or motivation to cook!

Ingredients for slow cooker sausage casserole:
5 sausages
3 carrots – sometimes I skip the carrots and serve air fryer carrots and parsnips alongside
2 white onions (use red onion if that’s all you have to hand!)
1 tin of chopped tomatoes (400g approx)
250ml beef stock (or veggie if you’re making this vegetarian or vegan)
Salt and freshly ground black pepper
1 teaspoon of oregano, basil, thyme and parsley (mixed herbs will work nice too)
15g tomato puree
A splash of Worcestershire sauce
Method to make a sausage casserole in the slow cooker:
Optional tip: Cut the sausages into bite size chunks.
Brown the sausages lightly. My slow cooker has a sauté function, but you can just use a frying pan if yours doesn’t.
Chop the carrots into rounds.
Slice the onions.
Add all of the ingredients to the slow cooker.
Cook on high for 4 hours minimum, or low for a minimum of 6 hours. Check at least once during the cooking time to ensure it still has plenty of liquid.
I have cooked this on low for up to 10 hours before.
Want to add some dumplings to your casserole?
I have a slow cooker beef casserole with dumplings recipe and you can use the dumplings recipe from that! You’ll need 100g of plain flour, 50g of suet and a splash of water. Make a slightly sticky dough, add little balls to the slow cooker pot one hour before serving and resist opening the lid again until you serve it up.

Parsnips work great, as do potatoes and you can skip the canned tomatoes if you want to also.
Sweet potatoes would go nice with this, either as a slow cooker mash or a baked potato along the side. Yum!
What sausages can you use?
ANY work well for this, as long as you give them a little brown before. I’ve found that some of the Vegan sausages will melt into the sauce a little, but that is just as delicious.
Also, I find Italian Sausage delicious with its fennel based flavour, as well as Heck Italia sausages and also Linda McCartney vegetarian red onion & rosemary sausages work well too.
What to serve with sausage casserole:
We have a LOT of different goodies that we love to enjoy with this dish. Here are some of my favourites to serve up to my family:
- Air fryer mashed potatoes
- Diced potatoes in the air fryer
- Air fryer canned potatoes (great if you’re on a budget!)
- Air fryer frozen potato wedges or air fryer potato wedges
- Green beans in the air fryer
- Air fryer sage and onion stuffing or oven cooked stuffing balls
- Air fryer bread rolls (great for mopping up all that sauce!)

How to cook sausage casserole in the slow cooker:

A delicious easy slow cooker sausage castile that is prepped in just minutes.
Ingredients
