These slow cooker chorizo loaded potatoes take just a few minutes to prepare, and then they cook themselves in the slow cooker.

A slow cooker helps make a really convenient dinner for my family. I have been branching out into side dishes recently, which is ideal when I have something that just cooks better in the oven or on the hob.

We love to eat potatoes, in so many ways, and these are right up there alongside air fryer jacket potatoes, Marmite roast potatoes and air fryer cheese chips!

What potatoes should you use for these chorizo loaded potatoes?

Any potatoes work with this really! I find that a floury potato is a great option for slow cooker dishes.

Want to boost the cooking time slightly?

I’d suggest part boiling the potatoes for around 4-5 minutes in salted boiling water. This will help to reduce the cooking time a little.
