Slow cooker chorizo loaded potatoes

Popping dinner in the slow cooker is so convenient for my family. At times I find that I forget about side dishes or vegetables until the last minute. Now I have a triple slow cooker I’ve been looking for new side dishes. These slow cooker chorizo loaded potatoes take just a few minutes to prepare and cook themselves in the slow cooker. This is ideal for serving alongside multiple dishes, or as a side dish for a BBQ.

Ingredients for slow cooker chorizo loaded potatoes

500g potatoes

50g chopped chorizo

100g cheddar cheese

Salt and pepper

2 tsp smoked paprika

1 tsp garlic granules or 3 garlic cloves

Method for slow cooker chorizo loaded potatoes

Line the slow cooker with foil. Spray with spray oil.

Wash and chop potatoes. You want them to be around the size of new potatoes so they cook well.

Place the potatoes inside the slow cooker.

Sprinkle over the salt & pepper, garlic granules/chopped cloves and chopped chorizo.

Mix if necessary to ensure the potatoes are evenly covered.

Sprinkle over the cheddar cheese.

Cover the top with foil.

Cook on high for 5 hours.

    Just used my slow cooker for the first time today. I brought it back from my Mother in Law’s house after she died three years ago. It was brand new and I have just got round to using it. Have made Chilli con Carne, will be interesting to see how it works out

      I do lots of recipes. My slow cooker is a Godsend. Easy to load in the morning, before I work online for the day, and it saves me a small fortune too!

    Hi Katy, I do like a good slow cooker recipe! I love the idea of using foil rather than putting the spuds straight in the slow cooker. It’s a recipe I will be trying.
