When the colder nights come there is nothing better in our household than a nice slow cooker dinner. This easy slow cooker chicken casserole recipe is ALWAYS a winner.
It is a great way to enjoy lots of vegetables, is frugal and takes just minutes to prepare too. You can spend just 5-10 minutes getting this ready and in your slow cooker pot and then leave it to cook for the whole day.
This easy slow cooker chicken casserole recipe can cook on low all day, or even overnight, or can be cooked on high in just a few hours, for those days when you don’t have time.

Ingredients for my easy slow cooker chicken casserole recipe
10g butter
10ml olive oil
2 medium onions
350g chicken breast pieces
1 tbsp plain flour
Garlic salt
400g potatoes
200g carrots (or 1 tin of sliced carrots)
300g mushrooms (or 1 tin of sliced mushrooms)
500ml chicken stock (I use 2 low-salt stock cubes)
1 tsp English mustard
1 tsp thyme
1/2 tsp oregano
1/2 tsp celery salt
2 bay leaves
Method for my easy slow cooker chicken casserole recipe
Chop the onion and fry in the butter and olive oil until lightly brown.

Add the onion to the slow cooker pot.
Wash potatoes and chop into bitesize pieces.

Season and flour your chicken breast pieces. Brown lightly in a pan. As I was in a hurry I did not cook through but just seared the outside of each piece.

Add your carrots, mushrooms, mustard, celery salt and herbs.

Add 500ml of chicken stock.
Stir well.
Add 2 bay leaves.

Cook on high for 4 hours or low for 8 hours. Can be left longer if desired, including overnight on low.
Remove bay leaves and serve.

Best herbs for chicken casserole
Personally I feel that thyme works SO well but I also love tarragon, lemon and garlic or rosemary and garlic. I sometimes use leftover air fryer rosemary chicken breast to make an easy version of this.
ALL of the slow cooker recipes on this website have been cooked using a Ninja Foodi OL750UK, or the previous model, but you can use ANY slow cooker, as timings should be very similar.

Want to make a chicken casserole with dumplings?
Ingredients for dumplings:
100g plain flour
50g suet
Enough water until you get a wet, slightly sticky dough – I usually find a couple of tablespoons are enough.
Method for chicken casserole dumplings:
Mix together the dough. Add the water very slowly so it doesn’t become too wet.
One hour before serving the casserole drop the dumplings in. I make 8-10 dumplings, so they are quite small, and 1 hour is sufficient time for them to be cooked and lovely and fluffy inside.
Can you make a chicken casserole with chicken soup?
Yes! Skip the chicken stock and use a can of soup instead for a richer, creamier casserole. Cream of chicken soup will work best!
Do you need to use chicken breast for this casserole recipe?
No! I use chicken breast as that is usually what I have in but chicken legs, chicken thighs or even chicken drumsticks can work really well for this recipe.
Want to add a splash of wine?
When you brown the chicken you’ll want to add the wine then, to cook off some of the alcohol!

Think looks super yummy and so easy to make. I love my cooker but never think to do a chicken casserole usually it's gammon beef or pork to put with a dinner.
